Ingredients
2 cups raw unsalted almonds
½ cup raw unsalted pumpkin seeds
2 tablespoons chia seeds
1 tablespoon unrefined extra virgin coconut oil, melted
2 tablespoons raw honey
½ teaspoon coarse sea salt
¼ teaspoon ground cinnamon
⅓ cup dried cranberries
¼ cup dark chocolate chips
Directions
Preheat your broiler to high heat.
In a medium mixing bowl, combine the almonds, pumpkin seeds, and chia seeds. Drizzle the melted coconut oil and raw honey over the mixture.
Add the coarse sea salt and ground cinnamon to the bowl and stir thoroughly until all the nuts and seeds are evenly coated with the honey and oil.
Line a baking sheet with parchment paper and spread the nut and seed mixture in a single layer.
Place the baking sheet under the broiler for 1 to 2 minutes, watching carefully to prevent burning. The mixture should become toasted and fragrant.
Remove from the broiler and stir the mixture, redistributing the nuts and seeds, then return to the broiler for another 1 minute until evenly toasted.
Remove from the broiler and let the mixture cool on the baking sheet for about 5 minutes, allowing the honey to begin setting and the pieces to firm up.
Stir the cooled mixture once more to ensure the honey coats the nuts and seeds evenly rather than sticking to the parchment paper.
Allow the mixture to cool completely to room temperature.
Once completely cooled, fold in the dried cranberries and dark chocolate chips, stirring gently to combine.
Transfer the trail mix to an airtight container and store for up to one month.
