Ingredients

1/4 cup water

1 tablespoon cornstarch

1/2 cup reduced sodium teriyaki sauce

1 pound lean ground turkey

1 cup chopped water chestnuts

1 tablespoon vegetable oil

6 fresh lettuce leaves

Directions

  1. In a small bowl, whisk together the water and cornstarch until no lumps remain, then stir in the teriyaki sauce to create a glaze mixture.

  2. Heat the vegetable oil in a large skillet over medium-high heat until it shimmers.

  3. Add the ground turkey to the skillet and cook, breaking it apart with a spoon, until it is no longer pink and reaches an internal temperature of 165°F, approximately 5 to 7 minutes.

  4. Stir in the chopped water chestnuts and the prepared teriyaki-cornstarch glaze, mixing well to coat all the meat.

  5. Simmer for 2 to 3 minutes, stirring occasionally, until the sauce thickens and coats the turkey evenly.

  6. Spoon the teriyaki turkey mixture into each fresh lettuce leaf and serve immediately.
