1 cup hot brewed coffee (or hot water)

Directions

  1. Preheat oven to 350°F. Butter a 10-inch cast iron skillet or line an 8x8-inch baking pan with parchment paper.

  2. In a medium bowl, whisk together almond meal, buckwheat flour, 1/4 cup cocoa powder, baking powder, salt, and demerara sugar.

  3. Add stevia (or additional sugar), vanilla extract, egg, milk, and melted butter to the dry ingredients. Stir until the batter is smooth and well combined.

  4. Gently fold the pitted and halved cherries into the batter.

  5. Pour the batter into the prepared skillet or pan, spreading it evenly with a spatula.
