Rajgira Kadhi – Fasting Yogurt Curry with Amaranth

A light and savory yogurt-based curry made with amaranth flour (rajgira), perfect for vrat (fasting days). This gluten-free dish features the warmth of cumin seeds, fresh ginger, and green chilies, enriched with crushed peanuts and finished with fresh cilantro. The kadhi is gently simmered until thickened and creamy, creating a comforting side dish that is naturally vegetarian and pairs well with fasting-friendly breads.

Ingredients
1 cup Plain yogurt
1 tablespoon Amaranth flour (rajgira)
to taste Rock salt (sendha namak)
2 cups Water
1½ teaspoon Ghee or peanut oil
1 teaspoon Cumin seeds
2 Green chilies, finely chopped
½ teaspoon Ginger paste
2 tablespoons Crushed peanuts
for garnish Fresh cilantro, finely chopped
Directions
In a large mixing bowl, combine the yogurt, amaranth flour, and rock salt to taste. Whisk together thoroughly until no lumps of flour remain and the mixture is smooth and uniform.
Pour the water into the yogurt mixture and stir well to create a smooth, pourable consistency. Set this mixture aside.
Heat the ghee or peanut oil in a medium saucepan over medium heat until shimmering.
Add the cumin seeds to the hot oil and allow them to sizzle and release their aroma, approximately 15–20 seconds.
Add the chopped green chilies and ginger paste to the pan. Cook for 30 seconds, stirring gently, until fragrant.
Immediately pour the yogurt mixture into the pan and stir continuously to prevent the yogurt from curdling. Mix well until combined.
Stir in the crushed peanuts and mix thoroughly throughout the curry.
Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer gently for 7–8 minutes, stirring every 2 minutes. The kadhi should thicken and lose any raw flour taste. The consistency should be creamy and pourable when finished.
Remove from heat and garnish generously with fresh chopped cilantro before serving.
