Ingredients
1/2 pound frozen raw shrimp, thawed
2 zucchini, cut into 1/2-inch pieces
1/2 pound andouille sausage, cut into 1-inch pieces
1 tablespoon vegetable oil
1 tablespoon Creole seasoning
Bamboo skewers
Directions
Soak bamboo skewers in water for at least 15 minutes to prevent charring.
Preheat your grill to medium heat.
Prepare the skewers by alternating ingredients: thread one shrimp, then a piece of zucchini, followed by another shrimp, and finish with an andouille sausage piece. Repeat this pattern to fill each skewer.
Brush the assembled skewers generously with vegetable oil on all sides.
Sprinkle Creole seasoning evenly over each skewer, coating all the ingredients.
Place the skewers on the preheated grill and cook for approximately 2 minutes per side until the shrimp are opaque and cooked through (internal temperature 160°F), and the sausage and zucchini are tender with light char marks.
Comments
This is a strong weeknight pick for Charlotte: shrimp and andouille are available at every major chain, zucchini is cheap year-round, and the ingredient list is genuinely short. The 25-minute claim is honest—you're threading skewers and grilling, not much more. Creole seasoning from Harris Teeter, Food Lion, or Kroger runs about $2, and twelve skewers feed a family or crowd without fussing. The only friction: bamboo skewers need soaking (not mentioned), which adds 30 minutes if you're not thinking ahead, and reheating grilled shrimp is always a trade-off on texture, so this is a same-night dish.
