Ingredients
1 lb ground beef
1 jalapeño, minced
1 tsp chili powder
½ tsp cumin
½ tsp salt
½ tsp black pepper
2 flour tortillas
1 cup shredded pepper jack cheese
½ cup sliced jalapeños
Directions
In a large bowl, combine the ground beef, minced jalapeño, chili powder, cumin, salt, and black pepper. Mix gently until all ingredients are evenly distributed throughout the meat.
Divide the meat mixture in half and form two ½ lb patties with your hands, making sure each is compact but not overworked.
Preheat your grill to medium heat. Once ready, place both burger patties on the grill.
Grill the patties for 5-6 minutes without moving them. Flip each burger and grill for another 5-6 minutes, until the internal temperature reaches 160°F.
Remove the burgers from the grill and place each one in the center of a flour tortilla. Keep the grill on and at medium heat.
Top each burger with ½ cup of shredded pepper jack cheese and ¼ cup of sliced jalapeños, dividing them evenly between the two burgers.
Fold the two side edges of each tortilla over the burger first, overlapping them slightly. Then fold the top and bottom edges over the burger to fully enclose it. Secure the top fold with a toothpick if needed to hold it in place.
Carefully place the wrapped burgers back on the grill, seam side down. Grill for 2-3 minutes until the tortilla develops a light golden color and crispy texture.
Flip the wrapped burgers gently and grill the other side for 2-3 minutes until evenly browned. Remove from heat and serve immediately.
