Ingredients

3 cups Black lentils, cooked

4 large Eggs

½ teaspoon Fine-grain sea salt

1 medium Onion, finely chopped

1 cup Whole-grain bread crumbs, toasted

1 tablespoon Extra-virgin olive oil

Directions

  1. In a large bowl, combine the cooked black lentils, toasted whole-grain bread crumbs, and finely chopped onion.

  2. In a separate small bowl, crack and beat the 4 eggs together until well combined.

  3. Pour the beaten eggs into the lentil mixture and stir thoroughly until the ingredients are evenly distributed and the mixture holds together. Season with fine-grain sea salt and mix well.

  4. Divide the mixture into 12 equal portions and shape each into a patty about 1/2 inch thick.

  5. Heat the extra-virgin olive oil in a large skillet over medium-high heat.

  6. Once the oil is hot, carefully place the patties in the skillet in batches, being careful not to overcrowd the pan. Cook for 3 to 4 minutes per side until golden brown and firm, until the internal temperature reaches 160F for the egg content.

  7. Transfer the cooked burgers to a plate and serve warm on buns or bread with your favorite toppings.
