Ingredients
3 cups Black lentils, cooked
4 large Eggs
½ teaspoon Fine-grain sea salt
1 medium Onion, finely chopped
1 cup Whole-grain bread crumbs, toasted
1 tablespoon Extra-virgin olive oil
Directions
In a large bowl, combine the cooked black lentils, toasted whole-grain bread crumbs, and finely chopped onion.
In a separate small bowl, crack and beat the 4 eggs together until well combined.
Pour the beaten eggs into the lentil mixture and stir thoroughly until the ingredients are evenly distributed and the mixture holds together. Season with fine-grain sea salt and mix well.
Divide the mixture into 12 equal portions and shape each into a patty about 1/2 inch thick.
Heat the extra-virgin olive oil in a large skillet over medium-high heat.
Once the oil is hot, carefully place the patties in the skillet in batches, being careful not to overcrowd the pan. Cook for 3 to 4 minutes per side until golden brown and firm, until the internal temperature reaches 160F for the egg content.
Transfer the cooked burgers to a plate and serve warm on buns or bread with your favorite toppings.
