Ingredients
3 tablespoons butter
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1 (10 ounce) bag miniature marshmallows
6 cups crispy rice cereal
14 regular Oreo cookies, chopped into small pieces
3/4 cup peanut butter
1 1/2 cups milk chocolate chips
Rainbow sprinkles, for topping
Directions
Coat a 9 by 13-inch baking pan with nonstick cooking spray. In a large saucepan, melt the butter over medium heat.
Add the miniature marshmallows and creamy peanut butter to the melted butter, stirring constantly until fully melted and smooth.
Remove the saucepan from heat and stir in the vanilla extract.
Place the rice cereal in a large mixing bowl.
Pour the warm butter and marshmallow mixture over the cereal and stir thoroughly until every piece is well coated. Fold in the chopped Oreo cookies.
Transfer the mixture to the prepared pan and press down firmly in an even, compact layer. Allow to cool completely and harden.
In a microwave-safe bowl, combine the milk chocolate chips and peanut butter. Microwave on high for 1 minute, stir well, then continue microwaving in 30-second intervals, stirring between each burst, until the mixture is fully melted and smooth.
Let the chocolate-peanut butter mixture cool for 5 minutes, then pour it evenly over the cooled cereal layer.
Distribute the rainbow sprinkles evenly over the chocolate topping. Cover the pan tightly with plastic wrap and refrigerate or freeze until the mixture is very firm.
Cut into bars and serve.
