Ingredients
1 cup All-purpose flour
½ teaspoon Baking soda
¼ teaspoon Salt
½ cup Unsweetened cocoa powder
½ cup Butter, softened
1 cup Granulated sugar
1 Egg
1 teaspoon Vanilla extract
½ cup Mini semi-sweet chocolate chips
½ cup White chocolate chips
Directions
Preheat your oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, cream together the softened butter and granulated sugar until well combined.
Add the egg and vanilla extract to the butter mixture. Beat until the mixture is light and fluffy, scraping down the sides of the bowl as needed.
In a separate bowl, whisk together the flour, baking soda, salt, and cocoa powder.
Add the dry ingredients to the wet mixture and stir until just incorporated. Scrape down the sides and mix briefly once more to ensure even distribution.
Fold in the mini semi-sweet chocolate chips and white chocolate chips until evenly distributed throughout the dough.
Drop rounded spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 8-9 minutes, until the edges are set but the centers still appear slightly underdone.
Let the cookies cool on the hot baking sheet for 5-10 minutes to finish baking and firm up, then transfer to a wire rack to cool completely.
Store the cooled cookies in an airtight container for up to 3 days.
