Ingredients

3 cups chicken stock, low-sodium broth, or dashi

3 tablespoons miso paste

2 tablespoons kimchi juice

2 tablespoons spicy black bean paste

3 ounces uncooked ramen noodles

1/4 cup shredded cooked chicken

3 tablespoons kimchi, chopped

1/2 cup sliced mushrooms

2 tablespoons sliced scallions

1 tablespoon chopped fresh mint

1 teaspoon toasted sesame seeds

Directions

  1. In a small saucepan or microwave-safe container, whisk together the stock, miso paste, kimchi juice, and black bean paste until well combined. Heat on the stove over high heat, bringing to a boil, or heat in the microwave on high power for about 3-4 minutes until steaming. If using the stovetop, this should take about 5 minutes.

  2. While the broth heats, place the uncooked ramen noodles, shredded chicken, chopped kimchi, and sliced mushrooms in a medium bowl.

  3. Pour the hot broth over the noodles and vegetables. Let the bowl sit for about 5 minutes, stirring once halfway through to help loosen and separate the noodles.

  4. Top the ramen with sliced scallions, chopped mint, and toasted sesame seeds. Serve immediately and enjoy.
