Ingredients

4 medium carrots, peeled and grated

1/4 cup raisins

2 teaspoons sugar

1 lemon, juiced

Directions

  1. Wash your hands thoroughly with soap and clean running water before beginning preparation.

  2. Peel the carrots and grate them into a medium mixing bowl using a box grater or microplane.

  3. Add the raisins and sugar to the grated carrots in the bowl.

  4. Cut the lemon in half and squeeze the juice directly into the bowl, removing any seeds that fall in.

  5. Toss all ingredients together thoroughly until the sugar dissolves and everything is evenly combined.

  6. Cover the bowl and refrigerate for at least 30 minutes before serving to allow flavors to meld and the salad to chill.
