Ingredients
1½ cup all-purpose flour
1½ tsp baking powder
½ cup unsalted butter, softened
2 tbsp white granulated sugar
½ cup packed light brown sugar
1½ tsp ground cinnamon
2 large eggs
2 tsp vanilla extract
½ cup whole milk
1 large large apple, peeled and finely chopped
Directions
Preheat your oven to 350°F.
Grease the inside of a 9 x 5-inch loaf pan with butter or nonstick spray, then lightly dust with flour to prevent sticking.
In a small bowl, stir together the brown sugar and cinnamon until well combined. Set aside.
In a large mixing bowl or stand mixer, cream together the softened butter and white sugar until the mixture is light and fluffy, about 2 to 3 minutes.
Add the eggs and vanilla extract to the butter mixture. Beat on medium speed until fully combined.
In a small bowl, whisk together the flour and baking powder. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour. Mix on low speed just until combined.
Pour half of the batter into the prepared loaf pan.
Distribute half of the chopped apples evenly over the batter layer.
Gently press the apples into the batter using the back of a spoon.
Sprinkle half of the cinnamon-brown sugar mixture over the apple layer.
Pour the remaining batter over the apple layer, then top with the remaining chopped apples and finish with the remaining cinnamon-brown sugar mixture.
Gently press the topping into the batter with the back of a spoon. Using a butter knife held vertically, create figure-eight swirls through the batter to marble the cinnamon-sugar mixture throughout without completely blending it.
Bake for 50 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then turn out onto a wire cooling rack to cool completely.
Comments
All ingredients are staples at any Charlotte grocer—no special trips required. Cost runs about $1.25 per serving, driven by butter and eggs, well within weeknight budget. The stated 60 minutes is honest for mixing and baking, though you'll need 10 extra minutes to cool before slicing; apples peel and chop quickly enough not to materialize as a real prep bottleneck. This is a straightforward one-bowl loaf that reheats beautifully and suits any weeknight or packed lunch, with no fussy technique or constant supervision.
