Ingredients
1 cup (120 grams) whole wheat flour
1 cup (125 grams) all-purpose flour
1 tablespoon (15 grams) aluminum-free baking powder
1/4 cup (50 grams) sugar
1/2 teaspoon fine sea salt
6 tablespoons (85 grams) cold unsalted butter, cut into small cubes
1 cup (135 grams) fresh blackberries
3/4 cup (190 grams) whole-milk ricotta cheese
1/3 cup (80 ml) heavy cream
Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, sugar, and fine sea salt until evenly combined.
Add the cold cubed butter to the flour mixture. Using a pastry cutter, two knives, or your fingertips, work the butter into the flour until the mixture resembles coarse breadcrumbs with some pea-sized pieces of butter still visible.
In a small bowl, stir together the ricotta cheese and heavy cream until smooth and combined.
Pour the ricotta mixture into the flour and butter mixture. Using a wooden spoon or spatula, gently fold everything together until just combined into a shaggy dough. Do not overmix.
Carefully fold the fresh blackberries into the dough using a few gentle turns, distributing them evenly while trying not to crush them.
Turn the dough out onto a lightly floured surface and gently form it into a disk about 1 inch thick. Cut the disk into 6 equal wedges, as if cutting a round cake.
Place the scones on the prepared baking sheet, leaving about 2 inches between each one.
Bake for 18 to 22 minutes, until the scones are golden brown on the edges and a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Allow the scones to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
Comments
Every ingredient is a staple at Charlotte chains—whole wheat flour, all-purpose flour, butter, ricotta, heavy cream, and blackberries are stocked year-round at Harris Teeter, Kroger, and Walmart, with no specialty stops required. The cost per serving lands around $1.50–$1.80 depending on blackberry season, driven mainly by fresh berries and ricotta; this is reasonable for a scone. The stated 45 minutes is honest for mixing, folding, and baking, though shaping the dough adds 5–10 minutes if you're not practiced. The recipe suits a weeknight breakfast or brunch for a family of six, requires minimal active attention once dough is mixed, and reheats well—leftovers stay tender in a 300-degree oven for 10 minutes or toasted the next day.
