Ingredients

20 large shrimp (U20 size), peeled and deveined

2 tbsp olive oil

1 fresh lemon, juiced

1 tbsp Cajun seasoning

2 tbsp water

4 cups baby spinach, fresh

1 Roma tomato, diced

Directions

  1. Heat the olive oil in a large skillet or saucepan over medium heat. Once the oil is shimmering, add the peeled shrimp in a single layer.

  2. Sprinkle the Cajun seasoning evenly over the shrimp, then pour the fresh lemon juice and water over them. Stir gently to combine and coat all shrimp with the seasoning mixture.

  3. Cover the skillet and cook for 12–15 minutes, stirring occasionally, until the shrimp are opaque and pink throughout and have reached an internal temperature of 145°F.

  4. Divide the fresh baby spinach among three serving bowls to create a bed for each salad.

  5. Top each spinach bed with the diced Roma tomato pieces and distribute the cooked Cajun shrimp and pan juices evenly among the bowls.

  6. Serve immediately while the shrimp is still warm.

Shrimp is locally sourced from the Carolina coast, and every other ingredient—olive oil, lemon, Cajun seasoning, spinach, and tomato—stocks readily at all major Charlotte chains including Harris Teeter, Food Lion, Kroger, and ALDI, so no special trips required. At roughly $4–5 per serving, the cost is driven primarily by shrimp; this is a weeknight staple, not budget cooking. The stated 20 minutes is honest if shrimp is pre-peeled and deveined, but the real time climbs to 25–30 minutes if you're doing that prep yourself, which most home cooks will be. The dish reheats reasonably well for a salad-based meal, though the spinach will soften, and it serves three adequately without fussiness—just sauté, dress, and plate.
