Ingredients

1 cup Medjool dates, chopped

1 cup Walnuts

1 cup Unsweetened coconut flakes

2 tablespoons Raw honey

2 tablespoons Sesame seeds, plus more for coating

¼ teaspoon Salt

Directions

  1. Combine the chopped dates, walnuts, coconut flakes, and salt in a food processor. Pulse until the mixture is finely ground but still holds together when pressed, about 1–2 minutes. The mixture should resemble wet sand.

  2. Add the raw honey and the 2 tablespoons of sesame seeds to the processor. Pulse again until well combined and the mixture becomes cohesive enough to hold a shape when pressed between your fingers, about 1 minute more.

  3. Transfer the mixture to a bowl. Let it rest for 5 minutes at room temperature to allow the flavors to meld and the texture to firm slightly.

  4. Pour additional sesame seeds into a shallow bowl or plate. Using a small spoon or melon baller, scoop the date mixture and roll it between your palms to form a ball about 1 inch in diameter.

  5. Gently roll each ball in the sesame seeds, pressing lightly so they adhere to the surface. Place on a parchment-lined tray or plate.

  6. Refrigerate for 15–20 minutes, or until firm. Serve chilled or at room temperature. Store in an airtight container in the refrigerator for up to 2 weeks.
