Ingredients

4 large tomatoes

1 large cucumber

1 cup chopped red onion

1 cup chopped green bell pepper

1/3 cup fresh parsley, chopped

1/3 cup apple cider vinegar

1 tablespoon olive oil

2 cloves garlic, minced

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1/2 teaspoon sugar

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning to prepare the salad.

  2. Cut the tomatoes into bite-sized cubes and place them in a large mixing bowl.

  3. Chop the cucumber into bite-sized pieces and add to the bowl with the tomatoes.

  4. Add the chopped red onion, green bell pepper, and fresh parsley to the salad bowl.

  5. In a separate small bowl, whisk together the apple cider vinegar, olive oil, minced garlic, salt, black pepper, and sugar until well combined.

  6. Pour the dressing over the salad vegetables in the large bowl.

  7. Gently toss all the ingredients together until the salad is evenly coated with the dressing.

  8. Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
