Ingredients
3 whole boneless pork chops
6 whole fresh ciabatta rolls
2 cup fresh arugula
½ cup fresh pecorino romano cheese, sliced
2 whole whole eggs
2 whole egg yolks
1 clove fresh garlic clove, minced
1 tsp garlic powder
1 tbsp freshly squeezed lemon juice
½ cup fresh Italian parsley, chopped
2 cup fresh breadcrumbs, plain
½ cup olive oil
2 tbsp olive oil
½ cup vegetable oil
2 pinch sea salt
to taste salt
to taste freshly ground black pepper
Directions
Prepare the coating station by combining the 2 whole eggs and 2 egg yolks in a shallow bowl and whisking until fully blended. In a separate shallow bowl, mix the fresh breadcrumbs with garlic powder and the 2 pinches of sea salt.
Pat the pork chops dry with paper towels. Season both sides generously with salt and freshly ground black pepper. Working with one pork chop at a time, dip into the egg mixture to coat completely, then dredge in the breadcrumb mixture, pressing gently to adhere. Set each breaded chop aside on a clean plate.
Heat the vegetable oil and ½ cup olive oil together in a large skillet over medium-high heat until the oil is shimmering and reaches approximately 350°F (use a thermometer for accuracy, or test with a small breadcrumb—it should sizzle immediately).
Carefully add the breaded pork chops to the hot oil and fry for 5 to 7 minutes on the first side, until golden brown. Flip carefully and fry the second side for another 4 to 6 minutes until the pork reaches an internal temperature of 160°F when measured at the thickest part. Transfer to a paper towel-lined plate to drain.
While the pork cooks, prepare the garlic aioli by combining the minced fresh garlic clove, lemon juice, and 2 tbsp olive oil in a small bowl. Mix until well combined and set aside.
Slice the ciabatta rolls horizontally, creating top and bottom halves. If desired, lightly toast the cut sides of the rolls to give them structure.
Assemble each panini by spreading a small amount of the garlic aioli on the bottom half of a ciabatta roll. Layer fresh arugula on the aioli, followed by a fried pork chop, and then a slice or two of pecorino romano cheese. Top with a sprinkle of chopped fresh Italian parsley, then cover with the top half of the roll.
Serve the paninis immediately while the pork is still warm and the cheese is soft, allowing it to slightly melt against the heat of the pork chop.
Comments
This is a solidly buildable weeknight panini that Charlotte's major chains stock completely, with pork chops and ciabatta rolls available at Harris Teeter, Food Lion, Publix, Walmart, ALDI, and Kroger. Cost per serving runs about $3.50–$4.00 driven by the pork chops and cheese, which is reasonable for a composed sandwich. The 45-minute estimate needs qualification: breading and pan-frying the chops takes real attention, and the whole-egg coating plus the cooling step push honest time closer to an hour, though the assembly is quick. Leftovers reheat imperfectly—the bread softens and the breading loses its snap—so this is best eaten the same night, and it suits a family dinner where everyone eats at once rather than grazing.
