Cubes of feta are layered with fragrant dried herbs and submerged in olive oil, then left to infuse for at least ten days, creating a deeply flavorful garnish for salads, grain bowls, and cured vegetable platters.

Ingredients

7 ounces feta cheese

¾ cup extra-virgin olive oil

1 teaspoon dried oregano

½ teaspoon dried thyme

Directions

  1. Cut the feta cheese into small, uniform cubes, approximately one-half inch on each side.

  2. Combine the dried oregano and dried thyme in a small bowl.

  3. In a clean glass jar with a tight-fitting lid, layer the feta cubes with the herb mixture, alternating between feta and herbs. Begin with a layer of feta, then sprinkle a pinch of the combined herbs, and repeat until all cheese is used, ending with herbs.

  4. Pour the olive oil carefully over the layered feta and herbs until the cheese is completely covered and submerged.

  5. Seal the jar tightly with its lid.

  6. Store the sealed jar in a cool, dry pantry or cupboard at room temperature (approximately 65–70°F). Do not refrigerate, as cold temperatures will cause the oil to solidify.

  7. Allow the marinated feta to infuse for at least 10 days before opening and serving. The flavors will continue to deepen over time.
