Ingredients
1/2 cup mayonnaise
3 cloves garlic, minced
1 teaspoon Dijon mustard
1 teaspoon ketchup
1/2 teaspoon Asian sesame oil
1 to 2 drops fish sauce (optional)
6 cups fresh broccoli florets
2 tablespoons olive oil
Salt and pepper to taste
6 gluten-free sub rolls or similar bread
Directions
Preheat your oven to 400°F. Pat the broccoli florets dry with paper towels to remove excess moisture.
Toss the broccoli with olive oil, salt, and pepper on a large baking sheet. Spread in a single layer.
Roast for 18-20 minutes, stirring halfway through, until the florets are tender and the edges begin to crisp and brown.
While the broccoli roasts, combine the mayonnaise and minced garlic in a small bowl and stir until well blended.
Add the Dijon mustard, ketchup, and sesame oil to the garlic mayo. Stir to combine thoroughly.
If using fish sauce, add 1 to 2 drops and stir until evenly distributed. Taste and adjust seasonings as needed.
Lightly toast the sub rolls until the outside is crispy but the interior remains soft, about 2-3 minutes in a toaster oven or on a baking sheet.
Spread a generous layer of the garlic mayo mixture on the inside of each toasted roll.
Fill each sub with roasted broccoli florets, dividing evenly among the six rolls.
Serve immediately while the broccoli is still warm and the rolls are crispy.
