No-Bake British Chocolate Tiffins

Ingredients
1 1/4 cups mixed nuts (almonds, macadamia, walnuts, or pecans), roughly chopped
4 ounces dark chocolate, finely chopped
1/4 cup butter
4 ounces shortbread, digestive biscuits, or similar butter cookies, chopped into bite-sized pieces
Directions
Line a square baking pan (approximately 8x8 inches) with parchment paper, allowing some overhang for easy removal.
Combine the chopped dark chocolate and butter in a heatproof bowl. Place the bowl over a pot of simmering water (double boiler method), stirring occasionally until melted and smooth. Remove from heat and let cool slightly.
In a separate bowl, combine the chopped nuts and biscuit pieces.
Pour the melted chocolate mixture into the nut and biscuit mixture, stirring until all pieces are evenly coated.
Transfer the mixture into the prepared pan and press down firmly using the back of a spoon to create a compact, even layer.
Place in the refrigerator for at least 3 hours, or until the mixture is completely firm and set.
Once set, remove from the pan using the parchment paper overhang and place on a cutting board. Cut into 10 equal squares or bars.
Store in an airtight container in the refrigerator for up to one week, or freeze for longer storage.
