Ingredients

1 lb boneless, skinless chicken breasts

½ cup fresh blueberries

¼ cup ketchup

2 tbsp dark brown sugar

1 tbsp apple cider vinegar

1 tbsp balsamic vinegar

1 tbsp soy sauce

2 clove garlic cloves, minced

1 medium shallot, minced

1 tbsp Dijon mustard

Directions

  1. In a medium saucepan, combine the blueberries, ketchup, brown sugar, apple cider vinegar, balsamic vinegar, soy sauce, minced garlic, minced shallot, and Dijon mustard. Stir well to combine all ingredients.

  2. Heat the sauce over medium heat, stirring occasionally, until it reaches a simmer. Allow it to simmer for 8-10 minutes, stirring gently, until the blueberries begin to break down and the sauce thickens slightly. Remove from heat and let cool slightly.

  3. Pat the chicken breasts dry with paper towels. If needed, pound them to an even thickness of about 3/4 inch so they cook uniformly.

  4. Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates or use a grill spray to prevent sticking.

  5. Reserve about 1/4 cup of the blueberry barbecue sauce for serving. Brush half of the remaining sauce over both sides of the chicken breasts.

  6. Place the chicken on the preheated grill and cook for 6-7 minutes without moving it, allowing a light char to develop.

  7. Flip the chicken and brush with the remaining sauce. Continue grilling for another 6-7 minutes until the internal temperature reaches 165°F when measured with a meat thermometer at the thickest part.

  8. Remove the chicken from the grill and let it rest for 3-5 minutes. Serve with the reserved blueberry barbecue sauce drizzled over the top or on the side.

All ingredients are standard supermarket stock at any Charlotte chain, with no special trips required. The 40-minute claim is honest for grilling, though marinating chicken in this sweet-savory sauce benefits from an extra 30 minutes if you have it, pushing real prep closer to 70 minutes for best flavor. The sauce is inexpensive—blueberries and pantry staples like ketchup and vinegars keep cost per serving under $3—but the dish demands active attention at the grill and does not reheat well once the glaze sets, making it a same-night, cook-to-order meal. This works perfectly for a family dinner when you can be home to tend the grill, less so for a busy weeknight where you need set-and-forget timing.
