Ingredients

4 tablespoons unsalted butter, softened

½ cup raw cane sugar

½ cup light or dark brown sugar

½ cup honey

2 large egg whites

1 cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon kosher salt

2 cups rolled oats

½ cup mixed dried fruit such as cranberries, cherries, and blueberries

½ cup mixed seeds and nuts such as sunflower seeds and pine nuts

¼ cup semisweet chocolate chips

Directions

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.

  2. In a stand mixer fitted with the paddle attachment, cream together the softened butter, raw cane sugar, and brown sugar until the mixture is light, fluffy, and smooth, about 2-3 minutes.

  3. Add the honey and egg whites to the mixer. Scrape down the sides of the bowl with a rubber spatula and continue mixing for about 1 minute until well incorporated.

  4. In a separate small bowl, whisk together the flour, baking soda, and kosher salt.

  5. Add the flour mixture and rolled oats to the wet ingredients in the mixer. Mix on low speed until just combined; do not overmix.

  6. Fold in the mixed dried fruit, mixed seeds and nuts, and chocolate chips using a spatula or on low mixer speed until evenly distributed throughout the dough.

  7. Using a small ice cream scoop or tablespoon, portion the dough onto the prepared baking sheet, spacing each cookie about 1 inch apart.

  8. Bake for 8 to 10 minutes, until the cookies are lightly golden brown around the edges and release easily from the parchment paper.

  9. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

This is a no-fuss cookie that hits all the marks for Charlotte households. Thirty minutes is honest—mixing and scooping take maybe 5 minutes, and baking is 12 to 15, so you're clean-up included by the half-hour mark. Every ingredient (butter, oats, chocolate chips, basic pantry staples) is stocked at Harris Teeter, Food Lion, Walmart, and ALDI; dried fruit and nuts are standard bulk or bagged items everywhere. At roughly $0.25 to $0.35 per cookie depending on your nut and fruit choices, this is economical enough for lunchboxes and after-school snacking. The real win is longevity—these hold at room temperature for three days and freeze beautifully, so a batch of 36 is a genuine weeknight insurance policy for the rest of the week.
