1 1/2 pounds fresh tomatoes
1/2 cup sugar
1/2 cup water
3/4 cup cider vinegar
1/2 teaspoon kosher salt
1/2 teaspoon whole mustard seeds
10 black peppercorns
6 whole fresh basil leaves
Directions
Bring a large pot of water to a boil. Score an X on the bottom of each tomato with a knife. Carefully place tomatoes in the boiling water for 30 seconds to 1 minute, until the skin begins to loosen. Remove with a slotted spoon and place in an ice bath to cool slightly.
Once cooled enough to handle, peel away the loosened skin from each tomato. Coarsely chop the peeled tomatoes, discarding the cores, and measure out 1 1/2 pounds of chopped tomato.
In a heavy-bottomed saucepan or Dutch oven, combine the sugar, water, cider vinegar, salt, mustard seeds, and peppercorns. Bring to a boil over medium-high heat, stirring occasionally to dissolve the sugar.
Add the chopped tomatoes to the boiling mixture and stir well to combine. Return to a gentle boil.
Reduce the heat to medium-low and simmer uncovered for 20 to 25 minutes, stirring occasionally, until the relish thickens and the tomatoes break down into a chunky sauce.
Add the basil leaves and simmer for an additional 2 to 3 minutes, allowing the basil to infuse the relish with its flavor.
Remove from heat and let cool to room temperature. The relish will continue to thicken as it cools. Store in an airtight container in the refrigerator for up to 2 weeks, or serve immediately at room temperature as a condiment.
