1/2 cup olive oil

1 small red onion, finely chopped

2 garlic cloves, minced

4 tablespoons fresh lemon juice

2 tablespoons red wine vinegar

2 teaspoons dried Greek oregano

Salt and pepper to taste

1 1/2 pounds pork loin, trimmed and cut into 1-inch cubes

2 cups Greek yogurt

1 English cucumber, peeled and grated

4 garlic cloves, minced

2 tablespoons fresh lemon juice

2 tablespoons extra virgin olive oil

4 pita breads, warmed

Directions

  1. In a medium bowl, combine 1/2 cup olive oil, chopped red onion, 2 minced garlic cloves, 4 tablespoons lemon juice, red wine vinegar, dried oregano, salt, and pepper. Mix until well blended to create the pork marinade.

  2. Add the 1-inch pork cubes to the marinade, stirring gently to coat all pieces evenly. Cover and refrigerate for at least 2 hours (or up to overnight) for best flavor.

  3. While the pork marinates, prepare the tzatziki sauce. In a bowl, combine the Greek yogurt with the grated cucumber, pressing gently to release excess moisture. Stir in 4 minced garlic cloves, 2 tablespoons fresh lemon juice, 2 tablespoons extra virgin olive oil, salt, and pepper. Mix until smooth and chill until serving.

  4. Preheat your grill to medium-high heat (about 400°F). If using wooden skewers, soak them in water for at least 30 minutes before grilling.

  5. Remove the marinated pork from the refrigerator. Thread the pork cubes onto skewers, leaving about 1/4 inch between pieces to allow even cooking. Discard the remaining marinade.

  6. Place the skewers on the preheated grill. Cook for 10-15 minutes, turning every 3-4 minutes, until the pork reaches an internal temperature of 145°F and is browned on all sides.

  7. During the last 2 minutes of cooking, warm the pita breads on the grill until lightly charred and pliable, about 30 seconds per side.

  8. Remove the skewers and pita from the grill. Slide the pork off the skewers onto a cutting board and let rest for 2 minutes. Serve the grilled pork with warm pita and tzatziki sauce on the side.
