Citrus-Buttermilk Sorbet with Thai Basil

Ingredients
2 cups granulated sugar
1 orange, zest and juice
2 lemons, zest and juice
1 quart buttermilk
6-8 fresh Thai basil leaves
1/8 teaspoon salt
Directions
In a large saucepan, combine the granulated sugar with 1 cup of water. Bring to a boil over medium heat, stirring frequently until the sugar dissolves completely, about 3-4 minutes. Once dissolved, remove from heat and allow the syrup to cool to room temperature.
While the syrup cools, wash the orange and lemons thoroughly. Using a microplane or fine grater, carefully zest the orange and lemons, collecting the colored zest in a small bowl. Avoid the bitter white pith underneath. Reserve the zests.
Cut the zested orange and lemons in half. Using a citrus juicer or reamer, extract all the juice from both fruits, pressing firmly to get maximum juice. Strain the juice through a fine-mesh sieve to remove pulp and seeds. You should have about 3/4 cup of combined citrus juice.
Roughly tear or bruise the Thai basil leaves by hand or with a mortar and pestle to release their aromatic oils. Place them in a small bowl.
Once the sugar syrup has cooled completely, stir in the reserved citrus zest and the crushed Thai basil leaves. Let steep for 10-15 minutes to allow the Thai basil flavor to infuse into the syrup, then strain out the solids, pressing gently to extract all flavor.
Pour the strained syrup into a large mixing bowl. Add the freshly squeezed citrus juice and salt, stirring well to combine. Taste and adjust sweetness or citrus intensity as desired.
Add the buttermilk to the citrus mixture in a steady stream, stirring constantly with a whisk until fully incorporated and the mixture is smooth and homogeneous. Avoid vigorous whisking that could cause the buttermilk to curdle.
Cover the mixture and refrigerate until it reaches 40°F or below, at least 2-3 hours, or preferably overnight for best flavor development.
Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer's instructions, typically 25-30 minutes, until the sorbet reaches a soft-serve consistency.
Transfer the churned sorbet to a freezer-safe container and freeze for at least 4 hours, or until firm enough to scoop. Serve directly from the freezer, optionally garnished with a fresh Thai basil leaf or thin citrus slice.
