Ingredients
10 ounces frozen broccoli
2 cans (about 30 oz total) canned low-sodium stewed tomatoes
1 cup cooked brown rice
1 can (15 ounces) canned white beans, rinsed and drained
to taste black pepper
to taste oregano, basil, or hot pepper (optional)
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Pour the stewed tomatoes (with their liquid) into a large skillet or electric skillet. Place over medium-high heat.
Add the frozen broccoli directly to the tomatoes. Stir gently to combine. The broccoli will begin to thaw and cook in the tomato liquid.
Allow the broccoli to cook for 10 to 20 minutes, stirring occasionally, until it reaches your desired tenderness. The vegetables should become soft and infuse with the tomato flavor.
Stir in the cooked brown rice and the rinsed white beans.
Season with black pepper and any optional herbs (oregano, basil, or hot pepper) to your taste.
Continue cooking, stirring occasionally, for 3 to 5 minutes until everything is heated through. Serve hot.
