Roasted Beet and Feta Gratin with Fresh Mint

Ingredients
3 whole Red beets (3 whole, 2 1/2 to 3 inches diameter), trimmed and scrubbed
¾ cup Heavy whipping cream
2 sprigs Fresh mint sprigs
1½ tablespoons Fresh mint, chopped (for garnish)
1 clove Garlic clove, peeled and smashed
to taste Butter (for greasing the dish)
½ cup Crumbled feta cheese
Salt, to taste
Black pepper, to taste
1/4 inch depth Water
Directions
Preheat oven to 400°F. Arrange the trimmed and scrubbed beets in a small baking dish. Pour in enough water to reach a depth of about 1/4 inch around the beets. Season lightly with salt and pepper. Cover the dish tightly with aluminum foil. Roast until the beets are completely tender when pierced with a fork, approximately 50 minutes. Carefully remove the foil (hot steam will escape). Allow the beets to cool until you can handle them comfortably. Once cooled, rub off the skin with your fingers or a paper towel and slice the beets into 1/4-inch-thick rounds. Set aside. (This step can be completed up to 2 days in advance; cover and refrigerate the sliced beets.)
Preheat the oven to 425°F. In a small heavy saucepan, combine the heavy cream, fresh mint sprigs, and smashed garlic clove. Bring the mixture to a boil over medium-high heat. Immediately remove from heat, cover the saucepan, and let the flavors steep undisturbed for 15 minutes.
Lightly butter a 1 1/2-quart gratin dish or shallow baking vessel. Arrange the sliced beets in the dish in even, overlapping layers, seasoning each layer lightly with salt. Carefully strain the mint-infused cream mixture through a fine sieve into the dish, discarding the mint sprigs and garlic. Distribute the crumbled feta cheese evenly over the top.
Bake until the cream bubbles at the edges and the feta cheese shows golden-brown spots, approximately 20 minutes. Remove from the oven and let rest for 5 minutes. Finish with a sprinkle of black pepper and the chopped fresh mint just before serving.
