Chewy No-Bake Chocolate Chip Granola Bars

These no-bake granola bars combine chewy oats, crispy rice cereal, and sweet chocolate chips held together by a honey-maple butter binder. Perfect for grab-and-go breakfasts or snacks, they require no oven and come together in just 20 minutes.

Ingredients
1 1/2 cups old-fashioned rolled oats
1 1/2 cups crisp rice cereal
3/4 cup mini semi-sweet chocolate chips
4 tablespoons unsalted butter
1/2 cup packed brown sugar
1/3 cup honey
3 tablespoons maple syrup
1 teaspoon vanilla extract
Directions
In a large mixing bowl, combine the rolled oats, crisp rice cereal, and mini chocolate chips. Stir to blend evenly and set the bowl aside.
In a small saucepan, add the unsalted butter, brown sugar, honey, and maple syrup. Place over medium heat and stir constantly for 4–5 minutes until the sugar completely dissolves and the mixture is smooth and combined.
Remove the saucepan from heat and stir in the vanilla extract until fully incorporated.
Allow the syrup mixture to cool in the pan for 2–3 minutes to prevent the oats from becoming too soft.
Pour the cooled syrup mixture over the oat and cereal mixture. Stir thoroughly until all the dry ingredients are evenly coated and no dry spots remain.
Lightly grease a 9×13 inch baking pan. Transfer the mixture into the pan and press down firmly and evenly with a spatula or the back of a wooden spoon, ensuring the bars are tightly packed so they hold together when cut.
Allow the bars to set at room temperature for at least 30 minutes before cutting them into 24 equal pieces.
