Tender sliced pork country ribs glazed in a savory-sweet hoisin-based sauce infused with garlic and fresh ginger. This straightforward dish comes together quickly with minimal prep, making it ideal for weeknight dinners or entertaining. The ribs are pan-seared to develop color, then finished with a bold Asian-inspired glaze that clings beautifully to each piece.

Ingredients

2½ pounds Boneless pork country ribs

½ cup Hoisin sauce

¼ cup Fish sauce

2 tablespoons Sugar

2 large cloves Garlic cloves, finely grated

1½ tablespoons Fresh ginger, finely grated

Directions

  1. In a small bowl, whisk together hoisin sauce, fish sauce, sugar, grated garlic, and grated ginger until well combined. Set the glaze aside.

  2. Pat the pork country ribs dry with paper towels and slice them into 1/2-inch-thick pieces.

  3. Heat a large skillet over medium-high heat. Working in batches if needed to avoid overcrowding, sear the pork slices for 3-4 minutes per side until browned and cooked through (internal temperature of 145°F). Transfer to a plate.

  4. Return all the cooked pork to the skillet and pour the glaze over it. Toss gently to coat all pieces evenly.

  5. Simmer over medium heat for 2-3 minutes, stirring occasionally, until the glaze is heated through and clings to the pork.

  6. Divide among serving plates and drizzle with any remaining sauce from the skillet. Serve immediately.

Fish sauce and hoisin sauce require a special trip to an Asian market or the international aisle at Harris Teeter or Kroger; neither ALDI nor Food Lion stocks them reliably, adding real friction to a weeknight. The stated 30 minutes is honest for pan or oven cooking, but ignore it if you're marinating—budget 45 minutes active plus time to rest. At roughly $1.50–$2.00 per serving for pork country ribs alone, this skews toward the middle-upper price range for a weeknight, driven by the protein. The upside is that it feeds eight and reheats well, making it smart for meal prep or a crowd.
