Ingredients
1 package (16.6 ounces) Oreos, crushed
¼ cup butter, melted
1 package (8 ounces) cream cheese, softened
½ can sweetened condensed milk
¼ cup powdered sugar
1 container (8 ounces) Cool Whip, thawed
½ cup Andes mint chocolate pieces, chopped
¼ teaspoon mint extract
2 drops green food coloring
Directions
Combine the crushed Oreos with the melted butter in a bowl and mix until the butter is evenly distributed throughout the cookie crumbs. Press this mixture firmly into the bottom of a 13x9 inch baking pan to form an even crust.
In a large bowl, add the softened cream cheese, sweetened condensed milk, and powdered sugar. Beat the mixture on medium speed until smooth and creamy, scraping down the sides as needed.
Gently fold the thawed Cool Whip into the cream cheese mixture until fully combined and no streaks of whipped topping remain.
Fold in the chopped Andes mint chocolate pieces, mint extract, and green food coloring until evenly distributed throughout the filling.
Spread the mint-chocolate filling evenly over the Oreo crust. Cover the pan with plastic wrap or aluminum foil.
Freeze for at least 4 hours, or preferably overnight, until the filling is completely firm.
When ready to serve, remove the pan from the freezer and let it sit at room temperature for 10-15 minutes to soften slightly. Cut into 12 bars and serve immediately.
