Ingredients
½ teaspoon baking powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
2 large eggs, at room temperature
1½ cups all-purpose flour
½ cup granulated sugar
½ cup packed light brown sugar
½ cup toasted and chopped pecans
½ teaspoon pumpkin pie spice
½ teaspoon salt
1 cup mashed sweet potato
1 teaspoon vanilla extract
⅓ cup plus 1 tablespoon vegetable oil
½ cup whole milk
Directions
Preheat your oven to 350 degrees F. Prepare a loaf pan (8 1/2 x 4 1/2 inches or 9 x 5 inches) by greasing it lightly and dusting the interior with flour. In a small bowl, whisk together the all-purpose flour, salt, baking soda, baking powder, cinnamon, and pumpkin pie spice until well combined.
In a large mixing bowl, whisk together the mashed sweet potato, granulated sugar, brown sugar, vegetable oil, eggs at room temperature, and vanilla extract until the mixture is smooth and well blended.
Add the flour mixture to the sweet potato mixture and stir with a spatula until just combined. Pour in the milk and fold gently until no dry streaks remain. Fold in the toasted and chopped pecans until evenly distributed.
Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for approximately 55 minutes, or until a toothpick inserted into the center comes out clean or with only a few moist crumbs.
Remove the bread from the oven and allow it to cool in the pan for about 10 minutes. Turn out onto a wire rack and cool completely before slicing and serving.
Comments
Sweet potato bread hits the Charlotte sweet spot: sweet potatoes are a regional staple, and every ingredient is a reliable stock item at Harris Teeter, Food Lion, Kroger, or Walmart. The stated 70 minutes is honest—bake time dominates, with 15 minutes of actual hands-on work. Cost runs about $1.30 per serving, driven mainly by eggs and pecans, which is reasonable for a 10-serving loaf. The real caveat is that this is a same-night cake that goes stale; it reheats poorly after day two, so plan to eat it fresh or freeze slices immediately.
