2 sweet potatoes
1 tablespoon oil
1 tablespoon creole seasoning
1 tablespoon salt
1 tablespoon sugar
1 tablespoon cayenne pepper
1 tablespoon ground coriander
Directions
Wash the sweet potatoes thoroughly under cold running water, then pat dry. Peel them if desired, or leave the skin on for extra fiber. Cut each sweet potato lengthwise into quarters, then cut each quarter into 1/4-inch-thick fries.
Place the cut sweet potato fries into a large bowl filled with cold water. Let them soak for about 1 hour to remove excess starch. This helps create a crispier exterior when baked.
Preheat your oven to 425°F (220°C).
Drain the soaked sweet potato fries in a colander and pat them completely dry with a clean kitchen towel or paper towels—removing excess moisture is key for crispiness.
In a large mixing bowl, combine the oil, creole seasoning, salt, sugar, cayenne pepper, and ground coriander. Stir together until well blended and the oil is fully incorporated with all the spices.
Add the dried sweet potato fries to the spiced oil mixture. Toss gently but thoroughly until every fry is evenly coated with the seasoning blend.
Spread the seasoned fries in a single layer on one or two baking sheets lined with parchment paper, arranging them in a single layer without crowding.
Bake in the preheated oven for 30 minutes. Remove from the oven and use a spatula to flip each fry over.
Return to the oven and bake for an additional 25–30 minutes, until the fries are golden brown and crispy on all sides with a tender interior. Thinner fries may finish cooking sooner, so check for doneness starting around 25 minutes.
Remove from the oven and serve immediately while hot and crispy. Season with additional salt to taste if desired.
