Tender pan-fried dumplings filled with seasoned ground lamb or beef, fresh herbs, and warm spices, served with a cooling garlic yogurt sauce. These aromatic handheld parcels combine cumin and paprika for a Mediterranean-inspired filling, creating a satisfying main course that's naturally grain-free when made with traditional wrappers. Serve warm as an appetizer or entrée.

Ingredients

1 lb Ground lamb or ground beef

¼ cup Fresh flat-leaf parsley, finely chopped

¼ cup Fresh mint, thinly sliced

1 tsp Ground cumin

1 tsp Sweet paprika

Kosher salt

30 wrapper Square dumpling wrappers

Water for sealing

1 cup Whole-milk Greek yogurt

2 clove Garlic cloves, grated

¼ tsp Salt for sauce

Directions

  1. In a medium bowl, combine the ground lamb (or beef), chopped parsley, sliced mint, ground cumin, sweet paprika, and kosher salt to taste. Mix gently with your hands until the filling is evenly combined, being careful not to overwork the meat.

  2. Place approximately 1 rounded tablespoon of the spiced meat filling in the center of a dumpling wrapper. Dip your finger in water and lightly moisten all four edges of the wrapper. Fold all four corners toward the center to form a point, then press the edges firmly and completely together to seal the dumpling completely. Set the sealed dumpling on a floured or parchment-lined baking sheet. Repeat this process with the remaining filling and wrappers until you have formed all 30 dumplings.

  3. Fill a large pot with water and bring it to a simmer. Add 1 tablespoon of salt to the water. Working in three batches to avoid crowding, carefully add the dumplings to the simmering water. Stir gently and cook for 3 to 6 minutes, until the dumplings float and the filling is cooked through to at least 160°F internal temperature for ground meat. Using a slotted spoon, transfer each batch to a paper-towel-lined plate to drain.

  4. While the dumplings cook, prepare the garlic yogurt sauce. In a small bowl, whisk together the whole-milk Greek yogurt, grated garlic, and salt. Stir until smooth and well combined. Serve the warm dumplings with the cold yogurt sauce on the side for dipping.

Lamb is available at Harris Teeter and Kroger but typically costs $12–15 per pound, driving the per-serving cost to around $1.50–2.00 even across 30 dumplings. The remaining ingredients—cumin, paprika, parsley, mint, dumpling wrappers, and Greek yogurt—are stocked at every major Charlotte chain, so no special trips are needed. The 40-minute stated time glosses over hand-pleating 30 dumplings, which realistically adds 20–30 minutes; budget closer to 60–70 minutes total unless you are confident with filling and folding. These reheat beautifully and freeze well, making them excellent for weeknight leftovers or meal prep.
