Turkey and Cucumber Sandwich

Ingredients
4 slices whole wheat bread
4 slices enriched white bread
1/2 cup plain fat-free yogurt
2 fresh dill sprigs, finely chopped
1/2 cup cucumber, finely chopped
1/4 cup onion, finely chopped
1/8 teaspoon black pepper
1/8 teaspoon salt (optional)
8 ounces turkey breast, thinly sliced
Additional cucumber slices, as desired
Directions
In a small bowl, combine the yogurt, chopped fresh dill, finely chopped onion, black pepper, and salt if using. Fold in the finely chopped cucumber and stir until well combined.
Lay out all 8 bread slices on a clean work surface. Divide the yogurt-cucumber mixture evenly among all slices, spreading approximately 2 tablespoons on each slice.
On the 4 slices of whole wheat bread, layer the sliced turkey breast and arrange fresh cucumber slices on top of the spread.
Top each layered whole wheat slice with one slice of white bread, spread side down, pressing gently to create 4 sandwiches. Cut each sandwich in half if desired and serve immediately.
