1/2 cup instant brown rice, uncooked

1 teaspoon canola oil

3 ounces low-fat smoked turkey sausage, cut into 1/4-inch pieces

1/2 medium red bell pepper, chopped

1 medium jalapeño pepper, seeded and finely chopped

1 can (15 ounces) low-sodium black-eyed peas, rinsed and drained

1/2 cup water

1 teaspoon salt

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Prepare the rice according to package directions, leaving out any salt, butter, or margarine.

  3. While the rice cooks, warm the canola oil in a medium non-stick skillet over medium-high heat, tilting the pan to distribute the oil evenly.

  4. Add the sausage pieces to the hot skillet and cook for about 3 minutes, stirring often, until the sausage develops a rich golden-brown color.

  5. Stir in the chopped red bell pepper and jalapeño pepper.

  6. Cook for 1 minute, stirring occasionally, to soften the peppers slightly.

  7. Add the rinsed black-eyed peas, water, and salt to the skillet and stir well to combine.

  8. Simmer for 2 minutes, stirring gently, until the mixture thickens slightly but still has some liquid visible.

  9. Remove the skillet from the heat.

  10. Cover the skillet and let it stand for 5 minutes to allow the flavors to meld together.
