Ingredients
2 boneless, skinless chicken breasts
2 tablespoons extra virgin olive oil
1 1/2 lemons
1/4 bunch fresh parsley, chopped
Salt to taste
Black pepper to taste
Directions
Pat the chicken breasts dry with paper towels. Season both sides generously with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat until shimmering.
Place the seasoned chicken breasts in the hot skillet. Cook for 6-7 minutes on the first side without moving them, until golden brown.
Flip the chicken and cook for another 5-6 minutes on the second side until the internal temperature reaches 165°F at the thickest point.
Squeeze the juice from the lemons over the cooked chicken in the skillet, stirring gently to coat.
Remove from heat and garnish with the fresh chopped parsley. Serve immediately.
