Ingredients
3 Moonstrip matzos (onion and poppy seed)
2 large eggs
Salt to taste
2 tablespoons butter or chicken fat
Directions
Break the Moonstrip matzos into bite-sized pieces and place in a shallow bowl.
Pour just enough cold water over the matzo pieces to lightly dampen them, stirring gently for about 30 seconds until they absorb some moisture but remain mostly crispy. Drain off any excess water.
Crack the eggs into a bowl and beat them together with salt to taste until well combined.
Heat the butter or chicken fat in a large skillet over medium heat until it melts and foams.
Add the moistened matzo pieces to the hot fat and stir to coat them evenly.
Pour the beaten eggs over the matzo and gently scramble everything together using a spatula, stirring frequently until the eggs are fully cooked and the mixture is golden and fluffy, approximately 4-5 minutes. The internal temperature should reach 165°F. Serve immediately.
