1½ cups chopped apples
1 teaspoon baking soda
1½ cups brown sugar
1 tablespoon butter
1 cup buttermilk
1 teaspoon cinnamon
1 large egg
2½ cups all-purpose flour
½ cup sugar
1 teaspoon vanilla extract
Directions
Preheat your oven to 325°F and lightly grease a 9×13-inch baking pan with butter or cooking spray.
In a large mixing bowl, combine the chopped apples, baking soda, brown sugar, butter, buttermilk, cinnamon, and egg. Stir until all ingredients are evenly moistened and combined.
Add the flour to the mixture and gently fold it in until just combined; do not overmix. The batter should be thick and slightly lumpy.
Pour the batter into the prepared 9×13-inch pan and spread it to an even thickness.
In a small bowl, mix together the sugar, additional cinnamon (about ¼ teaspoon), and vanilla extract to create a cinnamon-sugar topping. Sprinkle this mixture evenly over the entire surface of the batter.
Bake in the preheated oven for 45 minutes, until a toothpick inserted into the center comes out clean or with just a few moist crumbs. The top should be golden brown.
Remove from the oven and allow the cake to cool for at least 10 minutes before serving. It is best enjoyed while still warm.
