3 cloves Garlic cloves, finely minced

1 tbsp Harissa paste

1 tbsp Fresh flat-leaf parsley, minced

1 tsp Paprika

½ tsp Ground coriander

½ tsp Ground cumin

¼ tsp Ground fennel seed

Kosher salt and freshly ground black pepper, to taste

4 tbsp Extra-virgin olive oil

½ cup Plain yogurt

8 leaves Fresh basil leaves, roughly chopped

Tomatoes, chopped

Red onions, chopped

Cucumbers, chopped

Directions

  1. In a large mixing bowl, combine the ground lamb, minced garlic, harissa paste, parsley, paprika, coriander, cumin, fennel seed, and salt and pepper to taste. Mix gently with your hands until just combined—do not overmix, as this will make the sausages dense and tough.

  2. Divide the lamb mixture into 8 equal portions and shape each one into a compact patty or oval sausage about ¾ inch thick.

  3. Heat the extra-virgin olive oil in a large skillet over medium-high heat until shimmering. Carefully place the sausage patties in the hot oil without crowding the pan.

  4. Cook the sausages for 6–8 minutes, turning once halfway through, until they are golden brown on both sides and cooked through (internal temperature should reach 160F for ground meat). Transfer to a plate and keep warm.

  5. In a small bowl, whisk together the yogurt and chopped basil. Season with salt and pepper to taste.

  6. Arrange the chopped tomatoes, red onions, and cucumbers on a serving platter. Warm the flatbread gently in a dry skillet or over a flame if desired.

  7. Serve the cooked lamb sausages alongside the fresh vegetables, basil yogurt sauce, and warm flatbread. Diners can assemble their own wraps or eat the sausages with the vegetables and sauce on the side.
