Apple Pie Stuffed French Toast

Thick slices of French bread stuffed with warm spiced apples and dipped in a custard egg mixture, then pan-fried until golden. Served with additional caramelized apples on top for a delicious breakfast that tastes like dessert.

Ingredients
2 medium apples, peeled, cored and diced
3 tablespoons brown sugar
2 tablespoons butter
1/2 teaspoon cinnamon (for apple filling)
1 teaspoon cinnamon (for custard)
2 eggs
1 tablespoon heavy cream
1/2 teaspoon lemon juice
1/4 teaspoon vanilla extract
4 slices French loaf, 1 inch thick
Oil for cooking
Directions
In a small saucepan over medium heat, melt the butter and brown sugar together. Once the butter is fully melted, add the diced apples, lemon juice, and 1/2 teaspoon cinnamon.
Reduce heat to medium-low, cover the saucepan, and cook for approximately 15 minutes, stirring occasionally, until the apples are very soft and tender.
Drain the cooked apples in a fine strainer, reserving both the syrupy juice and about 1/2 cup of the apple pieces to use as topping. Set aside.
In a shallow bowl, whisk together the 2 eggs, heavy cream, vanilla extract, and 1 teaspoon cinnamon until the mixture is smooth and well combined.
Carefully slice each bread slice horizontally through the middle, cutting deep but not all the way through, to create a pocket for stuffing.
Heat oil in a large skillet over medium heat until shimmering. Divide the drained cooked apples evenly among the four bread slices, gently inserting them into the center cuts and lightly pressing to close.
Dip each stuffed bread slice generously into the egg custard mixture, coating both sides thoroughly and ensuring the mixture penetrates the edges.
Place the dipped bread slices onto the heated skillet and cook for 3 to 5 minutes on each side over medium heat until the exterior is golden brown and crispy, and the egg is fully cooked to 160°F internal temperature.
Transfer the cooked French toast to serving plates and top with the reserved apple pieces and drizzle with the reserved apple syrup. Serve immediately.
