Ingredients

12 Medjool dates, pitted and soaked in water for at least 30 minutes

1/2 cup unsweetened shredded coconut

1 tablespoon water (optional, for blending)

1/4 cup cocoa powder

2 tablespoons coconut oil

Pinch of sea salt (optional)

Directions

  1. Place the pitted Medjool dates in a bowl and cover them with water. Let them soak for at least 30 minutes until they become soft and plump.

  2. Drain the soaked dates completely. Transfer them to a food processor along with the shredded coconut and the optional pinch of sea salt.

  3. Pulse the mixture in the food processor until it comes together with a coarse, textured consistency. If the mixture is too dry, add the optional tablespoon of water and pulse again. Avoid overblending—you want some texture remaining.

  4. Using a cookie scoop or small spoon, form the mixture into 12 evenly-sized balls. Place each ball on a parchment-lined baking sheet.

  5. Place the baking sheet in the freezer and chill the bites for at least 30 minutes until they are firm.

  6. While the bites are freezing, combine the cocoa powder and coconut oil in a small bowl. Whisk together until you have a smooth, pourable chocolate coating.

  7. Remove the chilled bites from the freezer. Using a small spoon, drizzle a thin layer of the cocoa-coconut oil mixture over the top of each bite.

  8. Return the coated bites to the freezer for at least 30 minutes to allow the chocolate coating to set. Serve chilled. Store in an airtight container in the freezer for up to 2 weeks.
