Ingredients
2 tablespoons vegetable oil
1 medium leek, both white and green parts, chopped
1 clove garlic, minced
8 oz. smoked tofu, thinly sliced
4 oz. mushrooms (cremini, hen-of-the-woods, or mixed varieties), chopped into small pieces
6 oz. ground turkey
2 tablespoons mirin
1 tablespoon soy sauce
1 tablespoon sesame oil
½ teaspoon ginger, finely minced
Directions
Heat the vegetable oil in a large wok or skillet over high heat until it shimmers and is very hot. Add the minced garlic and chopped leek, then sauté for 3–5 minutes, stirring occasionally, until the leek becomes soft and translucent.
Reduce the heat to medium-high. Gently add the sliced smoked tofu and chopped mushrooms to the wok. Sauté for 3–5 minutes, turning the tofu and mushrooms occasionally but without aggressive stirring, to allow the tofu to develop light browning on the sides and the mushrooms to soften.
In a small bowl, whisk together the mirin, soy sauce, sesame oil, and minced ginger until combined. Pour this mixture into the stir fry and toss gently for about 1 minute.
Add the ground turkey to the wok, breaking it up with a spoon or spatula as it cooks. Continue cooking for approximately 5 minutes, stirring frequently, until the turkey is cooked through (internal temperature of 165°F) and shows no pink.
Transfer the stir fry to serving bowls and serve hot, accompanied by steamed white or brown rice.
