Ingredients
1 1/2 cups cooked rice, warm
2 eggs
1 cup kimchi, chopped
2 cloves garlic, chopped
2 tablespoons sesame oil
1 scallion, chopped
soy sauce to taste
Directions
Crack the eggs into a small bowl and beat them together with a fork until well combined. Set aside.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
Pour the beaten eggs into the hot skillet and scramble, stirring frequently, until fully cooked and broken into small pieces (about 2-3 minutes). Transfer to a plate.
Add the remaining 1 tablespoon of sesame oil to the same skillet. Add the chopped garlic and cook for about 30 seconds until fragrant.
Add the warm cooked rice to the skillet, breaking up any clumps with your spatula. Stir-fry for 2-3 minutes until the rice is heated through and lightly browned.
Stir in the chopped kimchi and cook for another 1-2 minutes, mixing well to distribute the kimchi throughout the rice.
Add the cooked scrambled eggs back to the skillet and toss to combine. Season with soy sauce to your taste.
Top with chopped scallion and serve immediately while hot.
