Ingredients
1 medium Medium apple, cored and chopped
2 tbsp Apple cider
2 tbsp Apple cider vinegar
5 oz Baby arugula
¾ tsp Kosher salt
¼ tsp Freshly ground black pepper
6 tbsp Extra-virgin olive oil
2 tbsp Canola oil
2 large Large shallots, thinly sliced
3 oz Goat cheese, crumbled
Directions
In a small bowl, combine the apple cider, apple cider vinegar, kosher salt, and black pepper. Whisk until the salt dissolves.
Add the extra-virgin olive oil to the bowl and whisk vigorously until the vinaigrette is well emulsified. Set aside.
Place the sliced shallots in a small microwave-safe bowl. Pour the canola oil over them and stir to coat evenly. Cover loosely with a microwave-safe lid or damp paper towel.
Microwave the shallots on high for 2 minutes, then remove and stir. Return to the microwave for another minute, stir again, then continue microwaving in 30-second intervals, stirring after each interval, until the shallots are light golden brown and crispy (total cooking time approximately 4–5 minutes, depending on microwave strength).
Immediately transfer the fried shallots to a paper towel-lined plate to drain. They will continue to crisp as they cool.
In a large bowl, combine the baby arugula and chopped apple.
Pour the desired amount of vinaigrette over the arugula and apple, then toss gently until everything is evenly coated.
Transfer the dressed salad to a serving plate or individual plates. Top with crumbled goat cheese and the warm fried shallots, then serve immediately.
Comments
Every ingredient lands at Harris Teeter, Food Lion, Walmart, or ALDI without a second trip. The stated 15 minutes is honest—slicing apples and shallots, whisking vinaigrette, and frying shallots in batches fits that window easily. Cost per serving runs $2.50 to $3.00 (goat cheese is the driver), making this a light lunch or dinner-party side that feeds four without fatigue. The one caveat is that fried shallots soften after a few hours, so this is a same-night dish; assembly takes three minutes if you fry and dress just before serving.
