2 tablespoon butter, preferably Irish
1 tablespoon extra-virgin olive oil
1 medium onion, peeled and thinly sliced
4 kale leaves, julienned
salt and freshly ground black pepper, to taste
all-purpose flour, for dusting
12 ounce pizza dough, homemade or store-bought
8 ounce black pudding, thinly sliced
6 ounce sharp cheddar cheese, shredded
Directions
Position a pizza stone on the center rack of the oven and preheat to 550°F.
While the oven heats, melt the butter together with the olive oil in a medium skillet over medium-low heat. Add the sliced onion and julienned kale, then season generously with salt and pepper. Cook, stirring occasionally, until the onions become soft and translucent and the kale is tender, approximately 8 to 10 minutes.
Dust a clean work surface with flour. Stretch and shape the pizza dough into a circle approximately 14 to 15 inches in diameter. Spread the cooked onion and kale mixture evenly across the surface of the dough. Distribute the black pudding slices in an even layer over the vegetables, then scatter the shredded cheddar cheese over the entire pizza, ensuring it covers all the toppings.
Carefully transfer the assembled pizza to the hot pizza stone and bake for 10 to 12 minutes, until the crust is deeply browned and crispy. Remove from the oven, taste, and adjust seasoning with additional salt and pepper as desired. Slice and serve immediately.
