Ingredients

5 medium sweet potatoes

4 medium apples

1/2 cup packed brown sugar

1/2 teaspoon salt

1/4 cup margarine

1 teaspoon ground nutmeg

1/4 cup hot water

2 tablespoons honey

Directions

  1. Wash your hands thoroughly with soap and water before beginning food preparation.

  2. Bring a large pot of water to a boil. Add the sweet potatoes and simmer for 15-20 minutes until they are just beginning to soften but are still firm enough to handle.

  3. Carefully remove the sweet potatoes from the boiling water and set them aside to cool until they can be handled comfortably. Once cooled, peel away the skin and slice the sweet potatoes into approximately 1/4-inch thick rounds.

  4. Peel each apple completely, removing the skin with a vegetable peeler or small knife.

  5. Core each peeled apple by cutting out the center seed cavity, then slice the apples into rings or chunks approximately 1/4-inch thick.

  6. Preheat your oven to 400°F. Lightly grease a 9x13-inch casserole dish with margarine or butter.

  7. Arrange a layer of sweet potato slices on the bottom of the prepared casserole dish, slightly overlapping if needed.

  8. Top the sweet potato layer with a layer of apple slices, arranging them evenly.

  9. Sprinkle the apple layer with a portion of the brown sugar, a pinch of the salt, and small pieces of the margarine (approximately 2 tablespoons total divided among layers).

  10. Repeat steps 7, 8, and 9 to create additional layers of sweet potatoes, apples, and the sugar-salt-margarine mixture, building the casserole until all sweet potatoes are used, ending with an apple layer on top.

  11. Top the final apple layer with the remaining brown sugar and margarine, distributing them evenly across the surface.

  12. Sprinkle the entire top layer generously with the ground nutmeg.

  13. In a small bowl, whisk together the hot water and honey until fully combined and the honey dissolves.

  14. Carefully pour the honey-water mixture evenly over the top layer of the casserole.

  15. Bake uncovered at 400°F for approximately 30 minutes, until the apples are very tender when pierced with a fork and the top is lightly golden.
