Ingredients

8 corn or flour tortillas

2 cups fat-free refried beans

2 cups shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese

Green onions, chopped (optional)

Directions

  1. Wash your hands thoroughly with soap and water before beginning food preparation.

  2. Preheat the oven to 350°F. Arrange the tortillas in a single layer on a baking sheet and bake for 10 minutes or until they are golden, crispy, and lightly curled at the edges.

  3. While the tortillas are baking, rinse the lettuce and tomatoes under cool running water.

  4. Pat the lettuce dry and shred it into bite-sized pieces. Dice the tomatoes into small, even chunks.

  5. Remove the baked tortillas from the oven. Spread 2 tablespoons of the refried beans evenly across each tortilla.

  6. Layer the shredded lettuce and diced tomatoes over the beans, then top each tostada with a portion of the shredded cheese.

  7. If using green onions, sprinkle the chopped green onions over each tostada for added flavor.

  8. Serve the tostadas immediately while the tortillas are still warm and crispy. Store any leftovers in an airtight container in the refrigerator for up to 2 days.
