Ingredients
1 cup (2 sticks) unsalted butter, at room temperature
2 cups light brown sugar, packed
2 large eggs
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups old-fashioned rolled oats
1 cup semi-sweet chocolate chips
1 cup sweetened shredded coconut
1 cup dried cherries, cut in half
1/2 cup M&Ms
Directions
Preheat your oven to 350°F if using a metal baking pan, or 325°F if using a glass baking pan. Spray a 9x13-inch baking pan with nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat together the room-temperature butter and packed brown sugar on medium speed until the mixture is smooth and creamy, about 2-3 minutes.
Reduce mixer speed to low and add the eggs one at a time, beating well after each addition until fully incorporated and the mixture is blended.
Mix in the vanilla extract until combined.
Add the dry ingredient mixture to the butter mixture and beat on low speed just until blended—do not overmix.
Using a sturdy spatula or wooden spoon, fold in the rolled oats, semi-sweet chocolate chips, shredded coconut, and halved dried cherries until evenly distributed throughout the batter.
Spread the batter evenly into the prepared baking pan. Sprinkle the M&Ms over the top of the batter, pressing them gently into the surface.
Bake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean. Avoid overbaking to keep the bars tender and moist.
Remove from the oven and allow the pan to cool on a wire rack until the bar cookies reach room temperature. Cut into 24 squares and serve.
