Ingredients

1 cup Basmati rice or long grain rice

2 cups Water

4 teaspoons Oil or ghee

1 Bay leaf

4 Green cardamom pods

1 inch piece Cinnamon stick

4½ Black peppercorns

½ teaspoon Cumin seeds

¾ cup Onion, sliced

2 Green chilies, slit

5½ Cashews, halved

3½ Almonds, sliced

Directions

  1. Rinse the basmati rice thoroughly under cold running water until the water runs clear, which removes excess starch. Transfer the rinsed rice to a bowl and soak in warm water for at least 20 minutes to allow even cooking.

  2. Drain the soaked rice in a colander and let it sit for about 15 minutes to dry slightly.

  3. Heat 2 teaspoons of oil in a large pan over medium heat. Once hot, add the bay leaf, cardamom pods, cinnamon stick, and black peppercorns. Allow the spices to toast until fragrant, about 30 seconds. Then add the cumin seeds and let them sizzle for another 10-15 seconds.

  4. Add half the sliced onion and the slit green chilies to the pan with the spices. Season with salt. Fry until the onions become translucent and soft, about 2-3 minutes.

  5. Add the drained rice to the pan and gently stir to coat with the oil and spices. Sauté for 1-2 minutes, ensuring every grain is well combined with the aromatics.

  6. Pour in the water and bring the mixture to a boil over medium-high heat. Once boiling, immediately reduce the heat to the lowest setting, cover the pan tightly with a lid, and cook without opening for 17-18 minutes. After 17 minutes, turn off the heat but keep the lid in place. Let the rice rest undisturbed for at least 10 minutes to allow the grains to firm up and complete cooking from residual heat.

  7. While the rice rests, heat the remaining 2 teaspoons of oil in a small pan over medium heat. First, add the halved cashews and sliced almonds, frying until they turn light golden brown. Transfer to a bowl with a slotted spoon. In the same oil, fry the remaining onions until they turn deep golden brown and crispy, adding a pinch of salt to speed the browning process. Remove and drain on paper towels.

  8. Carefully remove the lid from the rice and gently fluff the grains with a fork to separate them.

  9. Transfer the fluffy rice to a serving dish and generously garnish with the fried cashews, almonds, and crispy fried onions. Serve immediately while warm and fragrant.
