Ingredients
1 pound grass-fed ground sirloin
4 teaspoons barbecue sauce
1/4 teaspoon sea salt
1/2 cup crumbled blue cheese
4 large kale leaves
4 whole grain burger buns, split
Directions
In a large bowl, combine the ground sirloin, barbecue sauce, and sea salt. Using your hands, gently mix the ingredients until just combined, then divide the mixture into 4 equal portions and shape each into a burger patty about 3/4 inch thick.
Preheat your grill or grill pan to high heat. Place the patties on the hot grill and cook for 10 to 15 minutes, turning occasionally, until the internal temperature reaches 160°F. The exterior should be nicely browned.
Top each cooked burger patty with 2 tablespoons of crumbled blue cheese, then transfer to a clean plate and cover loosely with aluminum foil to keep warm while you finish grilling the remaining components.
Place the kale leaves directly on the grill grates and cook for 2 to 3 minutes, turning frequently, until the leaves become tender and develop light char marks. Remove from the grill and set aside.
Place the burger bun halves cut-side down on the grill for about 30 seconds, until lightly toasted and warmed through. Remove from heat.
To assemble, place one grilled kale leaf on the bottom half of each toasted bun, followed by one burger patty with blue cheese, then cap with the top bun half. Serve immediately while still warm.
